Madame Danh is a name spoken with deep respect and affection. It belongs to the grandmother of our chef, a woman whose life journey from Vietnam to Canada in 1986, guided by her French Catholic upbringing, forms the very soul of our restaurant.
Her legacy is the foundation upon which our flavors are built.
Inspired by Madame Danh’s cherished recipes, Chef Tyson brings his own culinary passion to life. Growing up learning to cook from his mother in Vietnam, Tyson formalized his training in Canada and honed his skills in some of BC’s most renowned kitchens. He now masterfully blends his grandmother’s traditional recipes with his own modern techniques.

Tyson’s culinary journey began in his mother’s kitchen in Vietnam. After moving to Canada, his passion was rekindled by the inspiring memory of his grandmother, Madame Danh. He now honors her legacy by sharing her cherished recipes, refined with his own contemporary techniques, hoping to bring the same joy through food that she did.
